Vanilla Variation

There are currently 3 major cultivars of vanilla grown globally, all of which derive from a species originally found in Mexico. The various vanilla subspecies are

Vanilla Planifolia (Bourbon vanilla or Madagascar vanilla)

The majority of the worlds vanilla is this vanilla planifolia or commonly known as Bourbon vanilla (after the former name of Réunion , Île Bourbon) or Madagascar vanilla. These are grown on Madagascar and neighbouring islands in the southwestern Indian Ocean. It is also used to describe the distinctive vanilla flavour derived from vanilla planifolia grown successfully in tropical countries such as India.

Vanilla Tahitensis (Tahitian vanilla)

Some sited research shows that this species is possibly a cultivar from a hybrid-cross of Vanilla Planifolia and Vanilla Odorata. This species was introduced by French Admiral Francois Alphonse Hamelin to French Polynesia from the Philippines, where it was introduced from Guatemala by the Manila Galleon trade. These are commonly grown in South Pacific.

Vanilla Pompona (or West Indian vanilla)

West Indian vanilla is made from this strain grown in the Caribbean, Central and South America.


What about Maxican vanilla I hear you ask... Do not be confused, it is just another vanilla planifolia but grows in Maxico.

So... now when you hear people tell you that this is Madagascar Vanilla, your question should be – are they referring to the breed or are they referring to country of origin where the vanilla was harvested. The next thing I hear you ask is, “What is the best vanilla?”.


What is the best vanilla pods?

This really depends on personal preference. Vanilla pods that are grown in each regions give a slightly different flavour even if the vanilla are of the same strain. Just think of the vegetable you got in your fridge, lets say coriander (or garlic if you like), the aroma/scent from those grew in Thailand, China, Malaysia or any neighbouring countries are different. Nevertheless, I have gathered the common characteristic of each type of vanilla for you rough guide

  • Madagascar Vanilla: Rich and creamy

  • Indonesia Vanilla: Less creamy than Madagascan vanilla and more woody

  • Indian Vanilla: Full and chocolate

  • Tahitian Vanilla: Floral and cherry-chocolate
